Place the liquid dough ingredients in the mixer and place the flour plus malt flour on top.
If the falling number is lower than 250, no malt flour is required.
Malted flour, termed "kimea" in the United Republic of Tanzania, is usually made by germinating cereal seeds or grains by moistening them, drying them for a few days and then pulverizing the dried grains into a powder.
