...There is ongoing interest in the community inthe area of intolerance reactions to food and foodadditives. To inform future discussions on this subject,FSANZ initiated a scientific review to give furtherconsideration to key issues underpinning the publicdebate. This paper provides an overview of thecontemporary understanding of food intolerance, andhighlights the individual nature of intolerance reactionsand the wide range of food chemicals, whether naturallyoccurring or added to food, which may contribute tointolerance reactions. The clinical manifestations ofintolerance described in the literature vary widely, bothin relation to the symptoms reported and the substancesimplicated. Symptoms associated with food intolerancereactions range from mild to severe but the effects arelargely transient. The immune system is not involved inthese reactions, and therefore these forms of foodintolerance are not allergies. Food substances most commonly associated withintolerance reactions are naturally occurring chemicalssuch as salicylates and biogenic amines. While some foodadditives may contribute to intolerance reactions, clinicalobservations suggest that affected individuals are usuallysensitive to several substances, including both naturalfood chemicals as well as artificial and natural foodadditives....
