This flavouring can be obtained by three processes (or a combination of all three):

A caraway-flavoured spirit drink or Kümmel is a spirit drink produced by flavouring ethyl alcohol of agricultural origin with caraway (Carum carvi L.).

Gin is a juniper-flavoured spirit drink produced by flavouring ethyl alcohol of agricultural origin with juniper berries (Juniperus communis L.).

(8a) 'Flavouring' means the addition of flavourings or food ingredients with flavouring properties in the preparation of a spirit drink.

For children especially, food colourings are a common problem, and monosodium glutamate (flavouring) often causes skin rashes or hot flushes (Chinese Takeaway Syndrome).

(a) Bitter-tasting spirit drinks or bitter are spirit drinks with a predominantly bitter taste produced by flavouring ethyl alcohol of agricultural origin with flavouring substances.

Each grade of liquid uses both sensitive stimulation of the mouth and the throat (temperature, flavouring) and a reduction in the speed of the liquid (viscosity, yield point).

However, it should be noted that non-alcoholic wine beverages are processed industrial products which require flavouring in addition to sweetening, to give them a drinkable character.

Flavouring means using in the preparation of a spirit drink one or more of the flavourings defined in Article 3(2)(a) of Regulation (EC) No 1334/2008.’;
